Health value of carotenoids.

Carotenoids are liposoluble natural pigments highly diversified and widely distributed in nature. Besides their role as pigments, these compounds have numerous biological activities, some of them being fundamental such as provitamin A activity, antioxidant activity or immunomodulation activity. Moreover epidemiological studies have shown a relationship between the intake of diets rich in carotenoids and a lower incidence of some diseases such as cancers, cardio-vascular diseases or eye diseases.
