The results showed that moderate K+ could increase the hardness of microgel particles, and particles prepared at pH 8 and 9 were more favorable for forming Pickering emulsion gels.

Rheological and structural properties of sodium caseinate as influenced by locust bean gum and κ-carrageenan

It was found that an increase in polysaccharide content led to increased modulus in the mixtures. Development of soy protein isolate/κ-carrageenan composite hydrogels as a delivery system for hydrophilic compounds: Monascus yellow

Summary: This study aimed to develop SPI and KC composite hydrogels as a delivery system for hydrophilic compounds, with the findings indicating that these composite gels have tougher, more uniform, more compact, and sustained-release properties. The results suggest that non-covalent interactions are involved in the formation of SPI/KC composite hydrogels, and the release behavior of monascus yellow in the hydrogel network can be well described by a mathematical model.

Fabrication and characteristics of porcine plasma protein cold-set gel: Influence of the aggregates produced by glucono-5-lactone acidification on microbial transglutaminase catalysis

Summary: Porcine plasma protein (PPP) cold-set gel was successfully prepared using GDL and MTGase as synergistic inducers, with the optimum concentrations found to be 0.3% and 0.2%, respectively. The gel exhibited excellent texture and a water holding capacity (WHC) close to 75%. The main force in the gel network was determined to be the covalent crosslinking catalyzed by MTGase, which required the formation of GDL-mediated aggregates with appropriate structures.
