The characteristics of solidification and melting are reviewed. The properties of water and ice and the phase diagram of water are discussed with special emphasis on ice density. A concise account of the freezing process and the Stefan problem is presented. To this end, the four stages of freezing are identified, supercooling, nucleation and the formation of dendritic ice, the growth of concentric rings of solid ice at 0degreesC and the final cooling of the solid ice are treated in some detail. The subject of bursting of pipes is given particular emphasis. Attention is drawn to a common misconception on pipe bursting and to misleading relationships for the computation of freezing time for ice blockage. Several current applications of melting and freezing systems are outlined. (C) 2002 Elsevier Science Ltd. All rights reserved.
