The adsorption behaviors of three proteins, human serum albumin, beta-lactoglobulin and beta-casein, respectively, at the chloroform/water interface were studied by using the pendent drop technique. A drop was produced by immersing the pure chloroform solvent into protein buffer solution through a quartz capillary. It has been found that a folded drop surface can be formed by the adsorption of each protein after certain time. The 'skin-like' film was assumed to be composed of adsorption layer of protein. By using a 50 mum capillary, we have obtained a hundreds of micrometer droplet. The adsorption kinetics of each protein was recorded by using the commercial software of axisymmetric drop shape analysis to understand the forming process of the 'skin-like' film.
