A novel approach was developed to prepare a green bio-adhesive from defatted soy flour. The polysaccharides in defatted soy flour were enzymolyzed by Viscozyme L to produce reducing sugars, which were then crosslinked with defatted soy flour protein using the Maillard reaction during the curing process of the prepared defatted soy flour based bio-adhesives. The amount of reducing sugar and glucose in the defatted soy flour based bio-adhesives increased by 168.8 and 2555.1% while the sucrose and crude fiber decreased by 4.9 and 38.3%, respectively. The cured defatted soy flour based bio-adhesives had a higher amount of gel fraction, enhanced water resistance and bonding strength and the fracture surface displayed more compact structure. The novel approach described herein may be extended to prepare bio-adhesives from other biomass types consisting of polysaccharides and protein. (C) 2015 Elsevier B.V. All rights reserved.
