Summary: In this study, a novel peptides-zinc chelate (AKP-Zn) was obtained by reacting Antarctic krill peptides (AKP) with zinc sulfate. The structure and composition of AKP changed significantly after chelating with zinc. AKP-Zn chelate showed higher stability than zinc sulfate and zinc gluconate in various pH conditions and simulated gastrointestinal digestion experiments.

Construction and evaluation of an iron delivery system by ultra-small nanoparticles from roast sturgeon (Acipenser schrenckiid)

Summary: Novel water-soluble and ultra-small food-borne nanoparticles (FNs) were developed from roasted sturgeon as carriers for Fe(ii) delivery. The molecular interactions between FNs and Fe(ii) ions were investigated, revealing that approximately one FN can bind with four Fe(ii) through hydroxyl and amino groups. The FN-Fe(ii) complex showed stable retention in the digestive tract and could cross the intestinal wall for Fe(ii) delivery.
