How Glycine Betaine Modifies Lipid Membrane Interactions

Summary: Osmolytes are small organic compounds found ubiquitously in the cellular milieu, and they play a crucial role in regulating the response to environmental stress. Elasmobranchii, like sharks, accumulate high concentrations of osmolytes such as urea, trimethylamine N-oxide (TMAO), and glycine betaine (GB) to osmoregulate body fluids and counteract seawater salinity and hydrostatic pressure effects on cells. Glycine betaine modifies interactions between lipid membranes by exerting an apparent attractive force and its combination with urea can counteract its effects, supporting the idea that mixtures of osmolytes can achieve minimal net impact on biomolecular stability while counteracting osmotic stress.

Interaction of ectoine and hydroxyectoine with protein: fluorescence study

Summary: In this study, the effects of ectoine and hydroxyectoine on mink growth hormone were investigated using fluorescence spectroscopy. The results showed differences in fluorescence quenching of protein tryptophan by the two extremolytes, which were dependent on the pH of the solution. The interaction of the extremolytes with the protein could be related to their differing effects as stabilizers under varying conditions.
