Summary: This study aimed to isolate and characterize lactic acid bacteria with probiotic potential from silages of various forage plants, cocoa beans, and artisanal salami. The predominant species identified was Lactobacillus plantarum. The isolated strains showed varying survival abilities and antimicrobial activities under simulated gastric and pancreatic conditions, with strain L. plantarum SBR64.7 showing the most promising potential.

Microbial dynamics-linked properties and functional metabolites during Miang fermentation using the filamentous fungi growth-based process

Summary: The microbial community in Miang, an ethnic fermented tea from northern Thailand using Camellia sinensis var. assamica, was studied during a 10-day filamentous fungi growth-based process. The study found that filamentous fungi, yeast, and lactic acid bacteria were the main microbial populations, with Aspergillus niger being the predominant fungus. Organic acids and bioactive compounds identified in Miang were found to impact the quality of the tea.
