Ethanol adaptation in foodborne bacterial pathogens

Shoukui He et al.

Summary: Foodborne pathogens can develop adaptive responses to sublethal doses of ethanol, increasing their stress tolerance and potentially undermining current intervention strategies for food safety. Further research is needed to effectively mitigate ethanol adaptation in these pathogens.
