Investigating the microbiota of fermented fish products (Pla-ra) from different communities of northeastern Thailand

Summary: DNA sequencing was used to investigate the microbial diversity of fermented freshwater fish samples from three provinces in northeastern Thailand. Lactic-acid and halophilic bacterial genera were dominant, with variations in salt concentrations, raw materials, and fermentation processes influencing the microbial communities. Optimizing the fermentation process with dominant bacterial taxa may improve food quality and flavor control for industrial applications.
