Development and characterization of antimicrobial protein films based on soybean protein isolate incorporating diatomite/thymol complex

Summary: In this study, diatomite was used as an effective carrier to obtain a diatomite/thymol complex, which was further incorporated into soybean protein isolate to develop antimicrobial protein films. The complex showed improved dispersibility and compatibility in the protein matrix, leading to a film with moderate mechanical and water barrier properties. Additionally, diatomite helped reduce thymol loss during film formation and storage, prolonging its antimicrobial effect against Escherichia coli.
