Influence of wax type on characteristics of oleogels from camellia oil and medium chain triglycerides

Summary: The study investigated the influence of carbon chain lengths on the properties of wax-based oleogels formed from different oil sources. The results showed that carbon chain lengths impacted the critical concentration and textural parameters of the oleogels. Oleogels with wax esters displayed lower oil-binding capacity and textural value, as well as varied thermal behavior, crystal morphology, and distribution compared to oleogels made from other oil sources.

Effects of processing methods on the chemical composition and antioxidant capacity of walnut (Juglans regia L.) oil

Summary: Different methods of processing walnut oil were compared, with hexane extraction proving to be the most efficient for lipid isolation. The oils obtained from different methods showed variations in fatty acid composition and antioxidant content. Multiple linear regression analysis revealed that various components contribute to the overall antioxidant capacity of walnut oil.

Hydrocolloid coated oleosomes for development of oleogels

Summary: The study stabilized natural oleosome suspensions with xanthan and pectin hydrocolloids and converted them for the first time into oleosome templated oleogel structures. It was found that oleosomes coated with xanthan gum resulted in oleogels structures with higher firmness and elastic modulus values compared pectin coated samples. These findings provided novel information in designing the gels structures composed of unrefined, natural oil in the form of oleosomes.

Biopolymer interactions on emulsion-filled hydrogels: chemical, mechanical properties and microstructure

Summary: Bioactive carrier systems made from natural and biodegradable compounds have a wide range of applications in the food and drug industry, including protection, controlled delivery, texture modification, and lipid incorporation. This study aimed to produce emulsion-filled hydrogels using sonication and ionic gelation, containing potato starch, low alginate concentration, and gelatin. The chemical and physical structure of the hydrogels were evaluated, showing differences in FTIR spectra and hardness between gelatinized and non-gelatinized starch hydrogels. Digestion assay suggested different degradation mechanisms for the hydrogels.

Development of low-oil emulsion gel by solidifying oil droplets: Roles of internal beeswax concentration

The Effect of Cooling Rate on the Microstructure and Macroscopic Properties of Rice Bran Wax Oleogels
