The Physico-Chemical and Sensory Characteristics of Coloured-Flesh Potato Chips: Influence of Cultivar, Slice Thickness and Frying Temperature

Nijole Vaitkeviciene et al.

Summary: The study revealed a significant impact of different cultivars, slice thicknesses, and frying temperatures on the physico-chemical and sensory characteristics of coloured potato chips. The highest amounts of total phenolic content, total anthocyanins, dry matter, and starch were found in the cv. Blau Anneliese raw tubers. The fat content in the chips varied depending on the frying temperature, with higher levels observed at 160 degrees C compared to 180 degrees C.

Evaluation and storage stability of potato chips made from different varieties of potatoes cultivated in Pakistan

Asad Nawaz et al.

Summary: The study concluded that Lady Rosette and Caruso potato varieties have good physiochemical properties and stability, making them suitable for making potato chips, with the added potential for Lady Rosette due to its lower oil uptake. Additionally, all varieties showed storage stability for up to 60 days, indicating that the prepared chips can be used for an extended period of time.

Evaluation of Quality Parameters of Seven Processing Type Potato (Solanum tuberosum L.) Cultivars in the Eastern Sub-Himalayan Plains

Santanu Das et al.

Summary: This study evaluated seven processing type potato cultivars in the eastern sub-Himalayan plains of India, revealing wide variation in quality parameters among the cultivars. Among them, the 'Kufri Frysona' cultivar showed the highest specific gravity and dry matter content, making it suitable for the processing industries in the region.
