Summary: This study aimed to add value to low-grade Hidakakombu by fermenting it with Lactiplantibacillus pentosus SN001. The fermentation process increased the content of GABA and the viability of L. pentosus SN001 in the fermented Hidakakombu was confirmed. Fermentation with L. pentosus SN001 was found to be an effective means of adding high value to low-grade Hidakakombu.

Summary: Outbreaks of algal blooms on the South Korean coast, known as golden and green tides, not only severely damage the local environment but also impact the marine ecological system. However, these edible algae, such as Sargassumhorneri and Ulva spp., are rich sources of beneficial bioactive components. This study found that S.horneri extract showed higher antioxidant and anti-glycation properties compared to Ulvapertusa extract. Furthermore, the intake of S.horneri was associated with changes in the caecal microbiota of mice fed a high-sucrose and low-fiber diet, suggesting its potential as a functional food.
