Bioprotection strategies in winemaking

Paola Di Gianvito et al.

Summary: Interest in biological control of food spoilage microorganisms has been increasing globally, and the wine industry is no exception. The use of commercial microbes during wine fermentation aims to produce high quality wines while reducing the need for chemical additives. This review focuses on the potential of wine yeasts and lactic acid bacteria as bioprotection agents and their mechanisms of action.

Selection Process of a Mixed Inoculum of Non-Saccharomyces Yeasts Isolated in the DOCa. Rioja

Rocio Escribano-Viana et al.

Summary: The study aimed to select a non-Saccharomyces inoculum from D.O.Ca. Rioja for winemaking, ultimately choosing a mixed inoculum of Lachancea thermotolerans-Torulaspora delbrueckii in a 30/70 ratio. The selected inoculum stood out for its implantation capacity, production of compounds like glycerol and lactic acid, and modulation of wine acidity, making it suitable for the production of quality wines.
