Sustainable thermoresponsive whey protein- and chitosan-based oil-in-water emulsions for cosmetic applications

Summary: In this study, the use of biopolymers whey protein and chitosan in creating a thermoresponsive emulsion was investigated. The impact of chitosan inclusion and specific oils on rheological properties and temperature response was studied. Results showed that an emulsion with 15 wt. % WP, 10 wt. % jojoba oil, and 0.5 wt. % chitosan exhibited the strongest structural response to temperature.
