Modelling the biphasic growth of non-starter lactic acid bacteria on starter-lysate as a substrate

Summary: This study investigated the dynamics of interaction between starter and non-starter strains in cheese, revealing that biphasic growth was observed mainly in strains able to utilize the starter-lysate as an energy source. The growth of two Lactococcus lactis strains was not affected by the starter-lysate, while thirteen non-starter strains showed increased growth rates. The extent of growth of non-starter strains on the starter-lysate was found to be species and strain dependent.

Development of a model for the alcoholic fermentation of cocoa beans by a Saccharomyces cerevisiae strain

Summary: The study aims to control the quality of cocoa to produce high aromatic quality chocolate by using a mixed starter of selected strains of yeast and acetic bacteria and by controlling the conditions of fermentation. A mathematical model of the alcoholic fermentation of cocoa beans has been developed to show that the level of inoculation and the speed of the increase in temperature clearly drive yeast growth.

Isolation and identification of microorganisms in Kazakhstan koumiss and their application in preparing cow-milk koumiss

Summary: This study isolated and identified 52 lactic acid bacteria and 20 yeast strains from traditional homemade Kazakhstan koumiss, selected KZLAB13 and KZY10 strains as the best cofermentation combinations, and determined the optimal fermentation conditions. Results showed that cow milk fermented by these 2 strains possessed a promising taste, flavor, and quality, indicating that a combination of KZLAB13 and KZY10 strains can simulate the traditional koumiss.
