Summary: This study investigated the potential of innovative and renewable technologies for pasteurizing fish soup, specifically radiofrequency heating, high-pressure processing, and thermal solar energy. The performance of these technologies was compared to conventional thermal treatment using tubular heat exchangers. The results showed that radiofrequency and high-pressure processing technologies produced similar results to conventional thermal treatment, with some differences in color, lipid oxidation, and sensory analysis. Thermal solar energy and radiofrequency together can save up to 70% of energy, while high-pressure processing can save up to 75% in water use.

The commercial demand for HPP products has led to a systematic analysis of the mechanism of inactivation by high pressure and factors affecting its efficiency, along with discussion of modeling techniques for microbial inactivation kinetics.

The effects of different temperatures on the storage characteristics of lotus (Nelumbo nucifera G.) root

High pressure processing pretreatment of Chinese mitten crab (Eriocheir sinensis) for quality attributes assessment

Assessment of the Accelerated Shelf Life of Human Milk Dehydrated by Aspersion and Treated by UV, High Pressures, and Pasteurization

However, a 33.3% deterioration in lipid oxidation was observed at 40 degrees C. Using the applied model, it is predicted that powdered human milk can be preserved for approximately one year at 18 degrees C without significant changes in composition.
