Examining the consumer view of refreshing perception, relevant fruits, vegetables, soft drinks, and beers, and consumer age and gender segmentations

Jessica L. Ramirez et al.

Summary: The consumer perspective of refreshing perception, which describes the emotional attribute of foods, beverages, hygiene products, and household items, has been underexplored. Two online surveys were conducted to collect consumer insight into the importance of refreshing, its definition and related factors, and the identification of refreshing fruits, vegetables, and drinks. The findings revealed that thirst-quenching, temperature, and cooling taste were the factors most associated with refreshing, and water, watermelons, and cucumbers were the most frequently specified refreshing beverages/foods.

Analysis of Volatiles in Food Products

Malgorzata Starowicz

Summary: The evaluation of volatiles in food involves the separation and identification of volatile chemical compounds, as well as sensory characterization. Common separation techniques include SPME and SBSE, while GC coupled with mass spectrometry can be used for compound identification. Olfactometry and electronic nose are also promising approaches for studying food aroma.

Beer and Allergens

Frank Vriesekoop

Summary: Food allergies are a significant global health concern, with countries prioritizing the labeling of potential allergens in foods to warn consumers. While some allergens in certain foods are clearly recognized, others may be less obvious. Beer, containing barley and gluten-like proteins, along with other potential allergens like sulfites, has been found to cause allergic reactions in some individuals. This review examines various allergens present in beer production, highlights examples of allergens in beers, discusses different allergen regulations in various countries, and showcases case studies of allergic reactions to beer.
