Enzymatic Hydrolysis of Pulse Proteins as a Tool to Improve Techno-Functional Properties

Martin Vogelsang-O'Dwyer et al.

Summary: Enzymatic hydrolysis can improve the solubility, emulsifying, foaming, and gelling properties of pulse proteins. The effects of enzymatic hydrolysis on these properties vary based on factors such as the enzyme, substrate, processing steps, degree of hydrolysis, and pH. Careful selection of proteases and control of hydrolysis are necessary to maximize the potential of enzymatic hydrolysis to improve pulse protein functionality.

Fish and Shellfish-Derived Anti-Inflammatory Protein Products: Properties and Mechanisms

David C. Kemp et al.

Summary: The interest in using food-derived compounds for therapeutic purposes is increasing, with a focus on finding treatments for systematic chronic inflammation (SCI) that do not have the side effects of current anti-inflammatory drugs. Bioactive peptides (BAPs) derived from seafood processing byproducts (SPB) show promise for treating SCI. Studies have shown that anti-inflammatory BAPs from SPB work by inhibiting specific pathways and have specific structural tendencies that contribute to their efficacy, such as low molecular weight, positive charge, hydrophobic amino acids, and radical scavenging amino acids.
