Black garlic fermentation with green tea extract reduced HMF and improved bioactive properties: optimization study with response surface methodology

Soaking fresh garlic samples in green tea extract and extending fermentation time can increase the antioxidant properties and total phenolic content of black garlic, while reducing the formation of HMF.

Effect of relative humidity on the metabolite profiles, antioxidant activity and sensory acceptance of black garlic processing

Summary: This study investigated the effects of different relative humidities on the processing of fresh garlic. The moisture content, browning intensity, antioxidant capacity, and sensory acceptance were measured. Metabolite differences were analyzed using H-1-NMR, and a chemometric analysis was performed. The results showed that higher browning rates led to increased antioxidant capacity and intermediate relative humidity resulted in better sensory quality.

Evaluation on the physicochemical and digestive properties of melanoidin from black garlic and their antioxidant activities in vitro

Summary: This study investigated the physicochemical properties and bioactivities of melanoidin (MLD) as an important compound in black garlic. The results showed that MLD had strong metal-ion chelating capacity and radical scavenging activities, positively correlated with molecular weight. Additionally, MLD remained unchanged during simulated digestion, indicating its resistance to digestion similar to dietary fiber. It was found that the bioactivities of MLD were significantly reduced under certain treatments, but stable and retained after adding specific enzymes, providing insights for further research and application in functional food production.

Summary: The Maillard reaction intermediates (MRIs) derived from enzymatic hydrolysates of pea protein, prepared at a low temperature, reduced bitterness and increased umami taste. The concentration of MRIs positively correlated with umami and saltiness intensity, making them a potential substitute for salt reduction. Increased MRIs also promoted aldosterone secretion in saliva, enhancing human perception of saltiness.

The Use of a Thermal Process to Produce Black Garlic: Differences in the Physicochemical and Sensory Characteristics Using Seven Varieties of Fresh Garlic

Summary: This study showed that different garlic varieties exhibit varying physicochemical properties, such as antioxidant activity, total polyphenol content, and total soluble solids, during the ageing process to become black garlic. Sensory analysis revealed significant differences only in the texture pleasantness among the black garlic varieties, indicating that the sensory traits are largely consistent regardless of the variety. Additionally, the study found that most physicochemical parameters of fresh garlic cannot be used to predict the quality of black garlic.
