Effects of polysaccharides isolated from mushrooms (Lentinus edodes Berk or Agaricus blazei Murill) on the gelation of Pluronic® F127

Summary: This study evaluated the effects of polysaccharides from Lentinus edodes Berk and Agaricus blazei Murill mushrooms on the gelation process of the Pluronic (R) F127 copolymer. The results showed that these polysaccharides have good rheological properties and potential for pharmaceutical formulation development.

Influence of strains and environmental cultivation conditions on the bioconversion of ergosterol and vitamin D2 in the sun mushroom

Summary: Different cultivation systems in various countries significantly affect the agronomical parameters and chemical composition of Agaricus subrufescens mushrooms. The study evaluated the influence of cultivation process on ergosterol and vitamin D-2 content, with field cultivation showing better agronomic parameters for certain strains, and controlled environment cultivation providing higher biological efficiency values. Highest content of ergosterol and vitamin D-2 was observed in mushrooms obtained in the field from strain ABL 04/49.

Determination of umami compounds in edible fungi and evaluation of salty enhancement effect of Antler fungus enzymatic hydrolysate

Summary: The demand for low-salt foods is increasing due to their health benefits. It has been discovered that edible fungi contain a large amount of umami components, which can enhance the salty taste of NaCl. The Antler fungus was found to have the highest umami intensity, and its enzymatic hydrolysate could effectively enhance the salty taste of NaCl at lower concentrations. This synergistic effect between umami and salty suggests that Antler fungus could be used as an ingredient in low-salt foods.
