Iron Absorption: Factors, Limitations, and Improvement Methods

Elif Piskin et al.

Summary: Iron is essential for various functions in the human body, and its absorption is mainly controlled by the intestines. Achieving efficient iron bioavailability is crucial for preventing iron deficiency anemia. Different forms of iron in food and nutrient interactions can affect iron absorption. Extensive research has been conducted to improve iron bioavailability and combat iron deficiency.

Effect of functional beetroot pomace biscuit on phenylhydrazine induced anemia in albino rats: Hematological and blood biochemical analysis

Eman M. Abdo et al.

Summary: The study showed that incorporating beetroot pomace powder in biscuits can enhance protein, fiber, calcium, phosphorus, and iron levels, and have a positive effect on relieving anemia. Additionally, biscuits containing 15% pomace were found to increase hemoglobin, RBCs, and antioxidant enzymes in anemic rats.

Enhancing Micronutrients Bioavailability through Fermentation of Plant-Based Foods: A Concise Review

Mrinal Samtiya et al.

Summary: Plant-based foods are rich sources of vitamins and essential micronutrients, but they also contain anti-nutritional factors that can compromise the bioavailability of these nutrients. Studies show that fermentation and related processing methods can improve the nutrient and mineral bioavailability in plant foods.
