Effect of Edible Coating on the Quality and Antioxidant Enzymatic Activity of Postharvest Sweet Cherry (Prunus avium L.) during Storage

Summary: The effects of edible chitosan coating on postharvest sweet cherry were investigated. The results showed that the coating delayed the changes in quality parameters, respiration rate, total phenolic content, and anthocyanin of the cherries. The coating also maintained lower total phenolics and total antioxidant activity compared to the control.
