Effects of ethanol treatment on the physicochemical properties, microstructure and protein structures of egg yolk gels

Summary: The aim of this study was to investigate the effect of ethanol treatment on the properties of egg yolk gels (EYG). Ethanol treatment increased the hardness of EYG and facilitated the formation of disulfide bonds. It also promoted the aggregation of proteins and the conversion of immobile water or lipids to free forms. Additionally, ethanol treatment altered the surface properties and secondary structure of native egg yolk proteins. Overall, ethanol treatment induced structural changes and improved the stability of the gel structures, with increasing impact at higher concentrations.

Green tea polysaccharide conjugates and gelatin enhanced viability of L. acidophilus by layer-by-layer encapsulation

Summary: Adverse environments like the gastrointestinal tract can affect the effectiveness of probiotics, so protecting and fully utilizing their effects are important in probiotic research. In this study, green tea polysaccharide conjugate (gTPC) and gelatin were used as encapsulation materials for Lactobacillus acidophilus, and layer-by-layer self-assembly technology was applied. The results showed that increasing the number of deposited layers improved the encapsulation and protection of the probiotics, enhancing their survival rate.

A combination of green tea polysaccharide conjugate and bovine serum albumin and its emulsion-stabilizing characteristics

Summary: The combination of tea polysaccharide conjugates (TPC) and bovine serum albumin (BSA) formed a complex with improved surface hydrophobicity and stability as an emulsifier. The TPC/BSA emulsion showed good protection and stability with the presence of epigallocatechin gallate (EGCG) and epigallocatechin (EGC) for 90 days.

High internal phase emulsions stabilized solely by alkali-extracted bamboo leaf polysaccharide conjugates

Summary: In this study, polysaccharide conjugates extracted from bamboo leaf residue were used to prepare oil-in-water high internal phase emulsions (HIPEs). The polysaccharide conjugates showed good emulsifying properties and could stabilize medium-chain triglycerides. The stability and viscoelasticity of the HIPEs were enhanced with increasing polysaccharide concentration, and they exhibited good stability during storage and exposure to heat and ions.

Chemical modification and structural analysis of polysaccharide from Solanum tuberdsm

Summary: Acetylation, carboxymethylation, sulfation, and phosphorylation were performed on polysaccharide from Solanum tuberdsm (STP). Phosphorylated P-STP (P-STP) showed the lowest protein content and the highest total carbohydrate content among the four modified products. Carboxymethylated STP (CM-STP) had the highest degree of substitution (DS) of 0.699, while sulfated STP (S-STP) had the lowest DS of 0.211. FT-IR and NMR analysis confirmed the successful modification of STP.

Hydrophobic Polysaccharides: Partially 2-Deoxygenated Amyloses

Chemical structure and inhibition on α-glucosidase of polysaccharides from corn silk by fractional precipitation

Summary: This study aimed to explore the effect of different corn silk polysaccharide fractions obtained by ethanol precipitation on their physicochemical properties and biological activities. The results showed that the fractions exhibited differences in physical properties and activities, with CSP80 showing stronger antioxidant activity and alpha-glucosidase inhibitory activity. Enzyme kinetic analysis indicated that CSP80 inhibited alpha-glucosidase by mixed type and reversible mechanisms, and fluorescence intensity measurements confirmed changes in the secondary structure of alpha-glucosidase due to the binding of CSP80. Isothermal titration calorimetry results illustrated that the binding of CSP80 to alpha-glucosidase complex was driven by enthalpy and hydrogen bonds played a major role in the binding process.
