Gels as fat replacers in bakery products: a review

Summary: This paper reviews the effect of different vehiculization systems as fat replacers in bakery products and focuses on the technological and nutritional properties of the reformulated products. The study shows that vegetable oils with high monounsaturated fatty acid content can effectively replace fat, and oleogelation is the most commonly used method of oil structuring. Furthermore, reducing fat content can meet the minimum legal requirements for nutrition claims under the EU legislation.

Nutritional and technological aspects of barley ß-glucan enriched biscuits containing isomaltulose as sucrose replacer

Summary: This study evaluated the physicochemical, sensory, and potential glycemic response properties of biscuits containing 6% barley beta-glucan and isomaltulose. The results showed that these fortified biscuits were softer and had lower glucose release compared to control biscuits. The sensory evaluation indicated high acceptability among diabetic individuals. This suggests that these biscuits could provide health benefits while being highly acceptable to consumers with glucose metabolism disorders.

Summary: This study investigated the influence of food polysaccharides from different sources on microstructural and rheological properties of oil-in-water emulsions. The polysaccharides used were beta-glucan from oat, arabinoxylan from wheat, and pectin from apple. All polysaccharides increased the viscosity of emulsions and reduced lipid digestion rate and extent, with pectin showing the greatest effect.
