Untargeted metabolic footprinting reveals key differences between fermented brown milk and fermented milk metabolomes

Summary: This study compared the metabolomes of milk, fermented milk, brown milk, and fermented brown milk using liquid chromatography-mass spectrometry. Significant differences were observed in the abundances of various groups of metabolites. The Maillard browning reaction increased the intensity of flavor compounds in brown milk, but also led to an increase in a substance that may have negative health effects. Fermenting brown milk with the ND02 strain effectively counteracted this effect, and differences in metabolites between fermented brown milk and fermented milk were identified, contributing to their different nutritional qualities.

Cleavage sites and non-enzymatic self-degradation mechanism of ready-to-eat sea cucumber during storage

Summary: The non-enzymatic degradation of ready-to-eat sea cucumber products is closely related to their quality, as indicated by decreased hardness, increased free water content, and higher levels of free hydroxyproline. Protein was found to break easily at specific sites, with certain peptide bonds being more susceptible to cleavage, while the relative free energies of specific steps determined the rate of peptide bond cleavage.

Effects of genipin as natural crosslinker on barrier and mechanical properties of chitosan-astaxanthin film

Summary: This study aimed to investigate the effects of genipin crosslinking on the properties of chitosan-astaxanthin film. The results showed a decrease in transparency and elongation at break, with a slight increase in oxygen transmission rate. Fourier transform infrared observation indicated the formation of covalent linkage between chitosan and genipin. The crosslinked film showed improved water vapor transmission rate and tensile strength, making it a promising option for biodegradable packaging in high moisture food applications.
