Effects of ethanol treatment on the physicochemical properties, microstructure and protein structures of egg yolk gels

Summary: The aim of this study was to investigate the effect of ethanol treatment on the properties of egg yolk gels (EYG). Ethanol treatment increased the hardness of EYG and facilitated the formation of disulfide bonds. It also promoted the aggregation of proteins and the conversion of immobile water or lipids to free forms. Additionally, ethanol treatment altered the surface properties and secondary structure of native egg yolk proteins. Overall, ethanol treatment induced structural changes and improved the stability of the gel structures, with increasing impact at higher concentrations.

Exploring the underlying mechanisms on NaCl-induced reduction in digestibility of myoglobin

Summary: This study investigated the structural changes of myoglobin after salt treatment and the binding mode of substrate and pepsin/trypsin. The results showed that salt treatment altered the heme structure and hydrophobic cavity of myoglobin, resulting in reduced protein digestibility. Additionally, trypsin was found to be more effective in digesting high molecular weight peptides. Molecular dynamics simulation revealed that the binding between myoglobin and pepsin/trypsin was mainly maintained by hydrogen bond and hydrophobicity. The findings provide new insights into the low bioavailability of myoglobin.

The rise of thawing drip: Freezing rate effects on ice crystallization and myowater dynamics changes

Summary: This study investigated the ice crystallization and myowater dynamics changes in frozen bovine muscle and found that ultra-fast freezing led to a narrow distribution of ice crystals size with higher solubility, lower surface hydrophobicity, and stable myofibrillar protein structure. Ultra-fast freezing also resulted in significantly lower thaw loss compared to slow freezing. The study observed myowater redistribution during thawing, with slow freezing causing major migration of water from immobile water to free water. Proton density imaging showed the seepage of free water from myofibrils to the surface of the muscle, contributing to the formation of thawing drip.

Understanding interactions among aldehyde compounds and porcine myofibrillar proteins by spectroscopy and molecular dynamics simulations

The results show that the binding capacities of the aldehydes increase with increasing protein concentration, and aldehydes with longer carbon chains have stronger binding ability. The interactions between MPs and aldehydes may occur through covalent and physicochemical binding, with covalent binding playing a dominant role. The study also reveals that hydrophobic interactions are the major driving force for reversible binding of the aldehyde species and contribute to the stability of the myosin-aldehyde system.

Probing the interaction between selected furan derivatives and porcine myofibrillar proteins by spectroscopic and molecular docking approaches

Summary: The interactions between myofibrillar proteins (MPs) and furan derivatives were studied using spectroscopic and molecular docking approaches. The binding capacity of MPs to furan derivatives was found to be influenced by molecular polarity and the position of the branched chain. Fluorescence analysis revealed that the interaction involved both static and dynamic quenching, affecting the microenvironment of tryptophan and tyrosine residues in MPs. Conformational investigation showed that the presence of furan derivatives transformed the ordered structures of MPs into random coils. Molecular docking and thermodynamic parameters indicated that hydrogen bonds, van der Waals forces, and hydrophobic interactions were the main interaction forces between MPs and the four furan derivatives.

Effects of malondialdehyde on the protein oxidation and protein degradation of Coregonus Peled myofibrillar protein

Summary: The aim of this study was to evaluate the effects of malondialdehyde (MDA) on the structure and protein degradation of myofibrillar protein (MP) from Coregonus peled. Results showed that MDA could alter the structural characteristics of MP, increasing the amino acid side chain and carbonyl content while decreasing thiol groups and tryptophan fluorescence intensity. The oxidation degree also affected protein response and degradation.
