Study on the Flavor Compounds of Fo Tiao Qiang under Different Thawing Methods Based on GC-IMS and Electronic Tongue Technology

Summary: This study explores the quality characteristics and flavor differences of Fo Tiao Qiang using different thawing methods (natural, ultrasonic, microwave, and water bath thawing). The results show that ultrasonic thawing increases protein content, while microwave thawing decreases fat content. Ultrasonic thawing also enhances the presence of free amino acids and umami taste. However, compared to natural thawing, other thawing methods result in a decrease or increase in flavor substances.

The variation on structure and immunomodulatory activity of polysaccharide during the longan pulp fermentation

Summary: This study investigated the effects of fermentation methods on the structure and immunomodulatory activity of polysaccharides in longan wine or vinegar. Fermentation and purification were found to improve the immunomodulatory activity of polysaccharides by enhancing their structural features. Among the polysaccharides tested, P3 displayed the highest immunomodulatory activity due to its specific structural characteristics and activation of signaling pathways.

Variation in characterization and probiotic activities of polysaccharides from litchi pulp fermented for different times

GC-IMS and olfactometry analysis on the tea aroma of Yingde black teas harvested in different seasons
