Ca2+-Facilitated Adhesion of Bacteria on the Na-Montmorillonite Surface

Summary: The adhesion of bacteria on clay surfaces greatly influences their movement and distribution in soil and water. Bacterial adhesion experiments were conducted on Na-montmorillonite (Na-MMT) surface to investigate the role of Na-MMT and validate the isotherm and kinetic theory for bacterial surface adhesion with the presence of Ca2+ ions. Batch adhesion experiments were performed with varying time frames, temperatures, bacterial concentrations, and Ca2+ ion concentrations on the Na-MMT surface. The results showed that the adhesion capacity of Na-MMT was significantly influenced by Ca2+ ion concentration, temperature, time frame, and bacterial concentration when Ca2+ ions were present. The adhesion morphology of bacteria on the Na-MMT surface, observed through zeta-potential and atomic force microscopy (AFM), indicated that non-electrostatic forces dominate the bacterial adhesion onto Na-MMT surface.

Cross contamination of Escherichia coli O157:H7 in fresh-cut leafy vegetables: Derivation of a food safety objective and other risk management metrics

Summary: In this study, the cross contamination and distribution of Escherichia coli O157:H7 in fresh-cut lettuce were investigated in a simulated commercial process. A potential Food Safety Objective (FSO) for the pathogen was derived using a deterministic approach. Experimental outcomes and literature data were used to develop a probabilistic exposure model for E. coli O157:H7. The proposed Performance Objectives (POs) and Performance Criterion (PC) could help establish safety targets and corrective actions to reduce the risk of E. coli O157:H7 infections in fresh-cut leafy vegetables.

Infection behavior of Listeria monocytogenes on iceberg lettuce (Lactuca sativa var. capitata)

Summary: This study investigated the contamination stage, attachment site, internalization pathway, proliferation process, extracellular substance secretion, and virulence factors expression of L. monocytogenes on iceberg lettuce. The results showed that the contamination stage occurred within 0-20 minutes, followed by proliferation. Attachment was observed in stomata and winkles. L. monocytogenes showed greater internalization distance in the midrib compared to the leaf blade. The up-regulation of flaA and motA genes enhanced cell movement, while the up-regulation of actA and inla genes enhanced adhesion, favoring proliferation. Cells gradually secreted extracellular substances to form biofilms, with a preference for the leaf blade.

Influence of flagella and their property on the initial attachment behaviors of bacteria onto plastics

Summary: In this study, the effects of flagella and their property on the initial attachment behaviors of bacteria onto six types of plastics were investigated. It was found that E. coli with flagella exhibited better initial attachment performance onto all six types of plastics compared to strains without flagella. Sticky flagella further facilitated bacterial attachment by forming a more rigid attachment layer on plastics. Additionally, the presence of humic acid in suspensions or river water decreased the attachment of bacteria with sticky flagella onto plastics.

Adhesion of Escherichia coli O157:H7 during sublethal injury and resuscitation: Importance of pili and surface properties

Summary: Escherichia coli O157:H7 can recover from sublethally injured state and pose a threat to food safety. Adhesion ability of the recovered E. coli O157:H7 and its mutants on different food-related surfaces was investigated. Spinach showed the strongest adhesion of E. coli O157:H7, and at least one type of pili, especially curli, played a dominant role in adhesion. The adhesion population and pili contribution were affected by both surface and physiological state, which could be attributed to surface properties and gene expression levels. In addition, mannose addition reduced adhesion of cells on stainless steel.
