Antiradical and functional properties of subcritical water extracts from edible mushrooms and from commercial counterparts

Paula Rodriguez-Seoane et al.

Summary: This study explored the antioxidant and functional potential of subcritical water extracts from edible mushrooms, with Pleurotus citrinopileatus extracts showing the highest phenolic content and antioxidant properties. The extracts were also found to exhibit growth inhibition in selected human carcinogenic cells. Rheological studies confirmed that glucan-based hydrogels prepared with mushroom extracts had enhanced viscoelastic properties compared to commercial products, with Pleurotus eryngii extracts providing the strongest gels. The formulated hydrogels could find interesting applications in the food sector.

β-Glucans from Trametes versicolor (L.) Lloyd Is Effective for Prevention of Influenza Virus Infection

Shaohua Shi et al.

Summary: This study found that beta-glucans from Coriolus versicolor can effectively enhance the immune response against influenza virus. The beta-glucans induced the expression of various immune factors in mice and chickens, resulting in reduced weight loss, mortality, and lung viral titers. The results suggest that beta-glucans have a significant antiviral effect and could potentially be used as immunomodulators against influenza.

Development of polysaccharide-casein gel-like structures resistant to in vitro gastric digestion

Cynthia Fontes-Candia et al.

Summary: Controlling protein digestion with polysaccharide-casein gel-like structures can delay casein hydrolysis. Factors such as polysaccharide type, polysaccharide:casein ratio, and physical state of the structures influence the protection ability. Hydrogels exhibit stronger protection than aerogels, and a higher polysaccharide:protein ratio leads to stronger gel networks and better protection.

Common Trends and Differences in Antioxidant Activity Analysis of Phenolic Substances Using Single Electron Transfer Based Assays

Melanie Platzer et al.

Summary: Numerous assays have been developed to measure antioxidant activity, with the DPPH and ABTS assays being popular examples. This study compared the antioxidant potentials of 24 phenolic compounds using both methods and found common trends among most subgroups, but significant differences for some compounds. It suggests that the choice of assay should be based on the specific subgroup of phenolic compounds being studied.

Potential Usage of Edible Mushrooms and Their Residues to Retrieve Valuable Supplies for Industrial Applications

Harsh Kumar et al.

Summary: The food and agricultural sectors are seeking strategies to reduce waste disposal caused by raw materials while incorporating value-added products from agricultural waste into the circular economy. Edible mushrooms, appreciated for their medicinal properties and nutritional value, see nearly one-fifth of production wasted, presenting an underutilized resource rich in nutrients and compounds. Despite a focus on isolating bioactive components, there is a potential to valorize waste and edible mushrooms themselves for value-added goods, with researchers exploring applications in media production, skincare, biosorbents, and more.
