Acetobacteraceae as exopolysaccharide producers: Current state of knowledge and further perspectives

Julia Wuensche et al.

Summary: Exopolysaccharides formation is common among bacteria as a defense mechanism against harmful environmental influences. The use of renewable resources as substrates for exopolysaccharide production offers a sustainable alternative to fossil-based polymers in various applications. Acetobacteraceae, a family of bacteria traditionally associated with fermented food products, possess the ability to produce different types of polysaccharides with interesting properties. This review provides an overview of the current knowledge and recent trends in both homo- and heteropolysaccharide production by Acetobacteraceae.

Systematic optimization of exopolysaccharide production by Gluconacetobacter sp. and use of (crude) glycerol as carbon source

Tristan Rath et al.

Summary: The study focused on the production of exopolysaccharides (EPS) by Gluconacetobacter sp., with glycerol as a beneficial carbon source compared to glucose, and crude glycerol as a potential substitute. Optimal parameters resulted in a high EPS titer and productivity, with varying peptone concentrations leading to changes in monomer ratios and molecular size distribution. Multiple polysaccharides were identified, with the main one composed of glucose, galactose, mannose, and glucuronic acid, and a minor one of galactose, mannose, and ribose.
