In vitro digestibility of proteins, peptidomic analysis and antioxidant ability of sodium-reduced pork sausage with partial substitution of NaCl by KCl

Summary: This study investigated the effects of different salt replacements on the protein digestibility of pork sausage. The results showed that the substitution of NaCl with KCl improved the gastrointestinal digestibility and released more peptides, with a higher proportion of smaller peptides. Moreover, the digestion product with KCl exhibited excellent radical scavenging activity and improved antioxidant abilities. These findings suggest that using KCl as a replacement salt can effectively improve the digestibility and antioxidant properties of sodium-reduced meat products.

Screening and mechanisms of novel angiotensin-I-converting enzyme inhibitory peptides from rabbit meat proteins: A combined in silico and in vitro study

Summary: The study identified two novel ACE inhibitory peptides (EACF and CDF) from rabbit meat proteins using computational screening methods, showing strong inhibitory effects in vitro. Molecular docking experiments revealed the specific interactions of EACF and CDF with the ACE enzyme, highlighting the potential of rabbit meat proteins as a source for ACE inhibitory peptides. Virtual screening proved to be an effective, accurate, and promising method for discovering new bioactive peptides.

The model performance was proven to be robust after validation.

Identification and molecular mechanisms of novel antioxidant peptides from two sources of eggshell membrane hydrolysates showing cytoprotection against oxidative stress: A combined in silico and in vitro study

Summary: This study investigated the antioxidant and cytoprotective activity of eggshell membrane (ESM) hydrolysates from fresh and hatched eggs and identified antioxidant peptides and their molecular mechanisms. The results showed that both fresh and hatched ESM hydrolysates exhibited excellent antioxidant effects and protected cells by reducing ROS and MDA levels through the modulation of the Keap1-Nrf2 pathway. Novel peptides with higher antioxidant activity than GSH were synthesized and their molecular mechanism involved activation of the Keap1-Nrf2 pathway. This study provides insights for the application and research of food-derived antioxidant peptides.

Novel ACE inhibitory, antioxidant and a-glucosidase inhibitory peptides identified from fermented rubing cheese through peptidomic and molecular docking

Summary: This study used peptidomics approach to identify ACEIPs, AOPs, and alpha-glucosidase inhibitory peptides from fermented rubing cheese (FRB). Identification and in silico analysis of novel antioxidant peptides in broken rice protein hydrolysate and its cytoprotective effect against H2O2-induced 2BS cell model

The findings contribute to the expansion of the rice industry chain and provide insights into the selection and mechanisms research of antioxidant peptides.
