Effects of sugar beet pectin on the pasting, rheological, thermal, and microstructural properties of wheat starch

Effect of Inulin on Thermal Properties, Pasting, Rheology, and In Vitro Digestion of Potato Starch

Summary: In this study, a compound system of inulin-potato starch (PoS-IN) is prepared by compounding different concentrations of natural inulin (IN) with potato starch (PoS), and the physical and chemical properties of the compound system such as pasting, rheology, and digestion are investigated. The results show that the addition of IN greatly reduces the viscosity, breakdown, and setback of the complex system. It also prevents the complex system from being pasted and increases the stability of the PoS. The gel structure of the PoS-IN complex changes gradually from solid-like to liquid-like. Furthermore, the in vitro digestion test results reveal that the content of resistant starch in the complex system increases with the increase in IN concentration. This study provides guidance for the development and application of IN-starch-based food products, which can increase the nutritional value of traditional PoS-based food products.

Effects of Salecan on the gelatinization and retrogradation behaviors of wheat starch

Summary: This study investigated the effects of Salecan, a novel microbial polysaccharide, on the gelatinization and retrogradation behaviors of native wheat starch. The results showed that Salecan inhibited the short-term and long-term retrogradation of wheat starch, improved the gel microstructure, and reduced crystallinity. The addition of Salecan in Chinese steamed bread also inhibited moisture migration and maintained the texture during chilled storage.

In recent years, the combination of starch with other molecules has been a promising platform for developing modified starches with unique attributes. This study comprehensively reviews the modification of starch characteristics through complexation with gums, mucilages, salts, and polyphenols in food formulations.

Controlling the pasting, rheological, gel, and structural properties of corn starch by incorporation of debranched waxy corn starch

Summary: The addition of DWCS to NCS resulted in a linear decrease in pasting properties, while stability ratio, peak time, and peak temperature increased. Moreover, DWCS altered the rheological properties of NCS gels by decreasing consistency coefficient K and increasing flow behavior index n. Additionally, DWCS reduced the values of short-range ordered degree and relative crystallinity, leading to a more disordered microstructure in NCS gels.

Interaction between potato starch and Tremella fuciformis polysaccharide

Summary: This study investigated the mechanism of interaction between Tremella fuciformis polysaccharide (TP) and potato starch (PS). The results showed that TP inhibited starch granule swelling, formed complexes with the starch, and altered the physicochemical properties of the starch. The composite gels exhibited increased rigidity and density, and TP interaction resulted in an increase in the short-range ordered structure of starch.

Results showed that increasing the CUR:SBP molar ratio led to higher encapsulation capacity but slightly reduced encapsulation efficiency. Additionally, encapsulation in SBP significantly reduced the particle size of CUR and provided substantial protection during storage.

Effects of carboxymethyl chitosan on physicochemical, rheological properties and in vitro digestibility of yam starch

Summary: The study found that carboxymethyl chitosan (CMCS) reduces the paste viscosity of yam starch (YS) and does not effectively inhibit the movement of water molecules. Rheological measurements showed that YS-CMCS blends exhibit shear thinning behavior.
