Sensitivity of oat protein solubility to changing ionic strength and pH

Nano-architectural assembly of soy proteins: A promising strategy to fabricate nutraceutical nanovehicles

Summary: Utilizing different physicochemical strategies, soy proteins can be assembled into various nano-architectures, improving the water dispersibility, stability, and bioavailability of nutraceuticals. In addition to solo assembly, soy proteins can also co-assemble with polysaccharides to form versatile nano-architectures. Recent progress shows that assembled soy protein nano-architectures are being developed as nanovehicles for hydrophobic nutraceuticals.

Effects of protein concentration, pH, and NaCl concentration on the physicochemical, interfacial, and emulsifying properties of β-conglycinin

Summary: The physicochemical characteristics, interfacial, and emulsifying properties of β-conglycinin (7S) were influenced by protein concentration, pH value, and NaCl concentration. Increasing protein concentration enhanced the net charges and emulsifying efficiency of 7S. pH 3 and 8 favored smaller z-average diameters and higher net charges, leading to better emulsifying efficiency than at pH 5. Increased NaCl concentration decreased Zeta potentials and affected interfacial adsorption kinetics of 7S. Low net charges may decrease the electrostatic barrier for adsorption but not benefit the intermolecular interaction at the interface.
