Comparison of Pivot Profile, CATA, and Pivot-CATA for the sensory profiling of instant black coffee

The results demonstrate that the likelihood of selecting a CATA term increases more slowly at the extreme ends of the intensity scale and linearly otherwise. Practical applications of CATA questions in sensory product characterization tasks are highlighted, including their ability to accurately discriminate among samples.
