Preparation and characterization of gelatin active packaging film loaded with eugenol nanoparticles and its application in chicken preservation

Summary: In this study, eugenol-loaded sodium caseinate and trimethyl chitosan composite nanoparticles (ESTNPs) were prepared to improve the bioavailability and stability of edible films. Gelatin films loaded with ESTNPs showed enhanced barrier properties, thermal stability, antibacterial efficiency, and antioxidant activity. The release behavior of eugenol indicated that the composite film is suitable for acidic foods, especially meat packaging.

Concentration-dependent effect of eugenol on porcine myofibrillar protein gel formation

Summary: The effects of different concentrations of eugenol (EG) on the structural properties and gelling behavior of myofibrillar proteins (MPs) were investigated. EG decreased protein content and stability, but increased hydrophobicity and aggregation of MPs. The gelling properties of MPs were improved at lower EG concentrations, but hindered at higher concentrations.
