Summary: This study tested a novel combination of hydrocolloid gum arabic (GA) and carboxymethyl cellulose (CMC) as a coating to extend the postharvest life of tomatoes. The results showed that the biocomposite hydrocolloid coating reduced weight loss, decay percentage, and stress markers in tomato fruits. It also preserved bioactive compounds, color, and enzymatic ROS scavenging mechanism, and delayed senescence by maintaining cell wall fractions.
