Silver metallization-triggered liposome-embedded AIE fluorophore for dual-mode detection of biogenic amines to fight food freshness fraud

Summary: In order to fight freshness fraud in food, it is crucial to develop a method for detecting biogenic amines (BAs) in food. In our study, we developed a dual-mode sensor that combines colorimetric and ratiometric fluorescence techniques to detect BAs in food, using a silver metallization-based response system. This sensor has a low detection limit and wide linear range, making it reliable for detecting BAs in soy products, pork, and milk samples and preventing food freshness fraud.

The proposed immunoassay exhibited excellent sensitivity, specificity, recovery, and accuracy for quantitative detection of Escherichia coli O157:H7 in food safety.
