Role of siderophore in Pseudomonas fluorescens biofilm formation and spoilage potential function

Summary: This study investigated the role of pyoverdine in the formation of biofilm, motility, and spoilage potential of P. fluorescens. The deletion of pyoverdine genes led to a transition from biofilm to motility and promoted spoilage of stored food. Pyoverdine was found to regulate the transcription levels of several genes involved in bacterial motility and stress response.

Extracellular matrix affects mature biofilm and stress resistance of psychrotrophic spoilage Pseudomonas at cold temperature

Summary: The aim of this study was to investigate the biofilm forming characteristics and stress resistance of psychrotrophic Pseudomonas at low temperatures. The results showed that the biofilm biomass of these bacteria at 4 degrees Celsius was significantly higher than at higher temperatures, and low temperature induced higher secretion of EPS. Additionally, the mature biofilms formed at 4 degrees Celsius exhibited enhanced resistance to thermal and chemical treatments. These findings suggest that the large secretion and protection of extracellular matrix at low temperatures are associated with the formation of mature biofilms and their stress resistance.

The role of PhoP/PhoQ system in regulating stress adaptation response in Escherichia coli O157:H7

Summary: The formation and molecular mechanisms of acid tolerance response (ATR) in Escherichia coli O157:H7 during beef processing was investigated. Pre-acid adaptation increased resistance to acid and heat, while reducing resistance to osmotic pressure. Acid adaptation in meat extract medium increased ATR, while pre-adaptation at low temperature reduced it. Mildly acidic conditions and the PhoP/PhoQ two-component system acted together to enhance acid and heat tolerance. The expression of genes related to stress response and virulence was up-regulated under acid conditions and mediated by the PhoP/PhoQ TCS. Both acid adaptation and phoP gene knockout reduced the expression of critical pathogenic factors stx1 and stx2. These findings highlight the food safety risk and provide a basis for hurdle technology in beef processing.

Summary: This study investigated the influence of Pseudomonas fragi biofilm on Listeria monocytogenes and Campylo-bacter jejuni on stainless steel surfaces in different media. The biofilm of P. fragi produced more at 15℃ and in food homogenates. Co-cultivation with pathogens caused significant changes in L. monocytogenes and C. jejuni biofilm cells. A PVDF-HFP/PVP/MoO3 nanocomposite coating showed bactericidal activity in phosphate buffered saline and reduced bacterial counts in food homogenates. However, a high biofilm of P. fragi protected L. monocytogenes and C. jejuni against the functionalized nanocomposite surface in food homogenates.

Effectiveness and mechanisms of essential oils for biofilm control on food-contact surfaces: An updated review

Summary: Microbial biofilms pose a constant contamination threat in the food industry and a risk to human health. Essential oils (EOs), with their unique compound mixtures, have shown promise as natural alternatives for preventing biofilm formation on food-contact surfaces. This review highlights the anti-biofilm properties of EOs in inhibiting, removing, and preventing the dispersion of bacterial biofilms on these surfaces. The review also discusses the relationship between the effectiveness of EOs and their composition, concentration, the bacteria involved, and the surfaces they are applied to. The findings indicate that EOs have a high capability to control biofilms by regulating genes and proteins associated with motility, Quorum Sensing, and exopolysaccharides (EPS) matrix. Incorporating EOs into nanosized delivery systems, formulating blends, and combining EOs with other strategies can enhance their anti-biofilm activity.

The stress response mechanisms of biofilm formation under sub-lethal photocatalysis

Summary: In this study, the researchers investigated the stress response mechanisms of biofilm formation under sub-lethal photocatalysis. They found that under sub-lethal PC, the bacterial abundance and biofilm thickness decreased, but the content of extracellular polymeric substance per cell increased. It was also discovered that the biofilm exhibited resistance to oxidative stress and this resistance was mediated by the secretion of extracellular polymeric substance.
