Fabrication and interaction mechanism of ovalbumin-based nanocarriers for metallic ion encapsulation

Summary: This study revealed that ovalbumin interacts with flavonoids such as naringin, hesperidin, and anthocyanin through hydrophobic interactions and hydrogen bonding. The addition of flavonoids altered the secondary structure of ovalbumin and increased the stability of the complexes. The ovalbumin-hesperidin complex showed advantages in encapsulating mineral substances compared to other flavonoids.

Effects of ultrasonic pretreatment of soybean protein isolate on the binding efficiency, structural changes, and bioavailability of a protein-luteolin nanodelivery system

Summary: This study investigated the use of ultrasound pretreatment to improve the encapsulation efficacy, solubility, and stability of a soybean protein isolate-luteolin nano-delivery system. The results demonstrated that ultrasound pretreatment enhanced the performance of the system, including increased loading amount and solubility, decreased particle size, and improved thermal stability. It also showed that ultrasound pretreatment increased the release rate and antioxidant activity of the nano-delivery system. This research provides preliminary evidence for the development of ultrasound pretreatment in the construction of protein-based nano-delivery systems.

Pea protein based nanocarriers for lipophilic polyphenols: Spectroscopic analysis, characterization, chemical stability, antioxidant and molecular docking

Summary: The research successfully encapsulated lipophilic polyphenols CUR, QUE, and RES into PPI nanocarriers with different loading capacities, without changing the secondary structure of PPI. Results from FTIR, DSC, and XRD confirmed the transformation of polyphenols from crystalline to amorphous state after combination with PPI. PPI effectively shielded polyphenols from UV light and thermal treatment, and improved their antioxidant activity.
