Are fermented foods an overlooked reservoir of antimicrobial resistance?

Summary: Despite their many benefits, fermented foods may contribute to the spread of antimicrobial resistance. This review provides an overview of the diversity, distribution, and potential risks of antimicrobial resistance in fermented foods and beverages. Most studies have focused on antibiotic resistance genes (ARGs) in lactic acid bacteria and coagulase-negative Staphylococcus species. ARGs have the potential to be transferred from fermentation microbes to pathogens, but the fate of ARGs after consumption is still understudied.

A comprehensive and global evaluation of residual antibiotics in agricultural soils: Accumulation, potential ecological risks, and attenuation strategies

Summary: This study comprehensively evaluated the accumulation, distribution, and potential risks of antibiotics in agricultural soils on a global scale. The results showed that 56 types of antibiotics were detected with concentrations ranging from undetectable to over 7000 μg/kg. Tetracyclines, macrolides, sulfonamides, and fluoroquinolones were the most accumulated antibiotics. East China was identified as a hotspot for antibiotic contamination. Vegetable fields and orchards had higher antibiotic accumulation compared to croplands. The level of antibiotics decreased with increasing soil pH and organic matter content. Further research on the impacts of antibiotics on soil ecological function and a whole-chain approach for antibiotic reduction and soil remediation are needed.

Efficacy of immunization with a recombinant S. aureus vaccine formulated with liposomes and ODN-CpG against natural S. aureus intramammary infections in heifers and cows

Summary: The present study evaluated the protective ability of a subunit vaccine composed of recombinant molecules against S. aureus infection and assessed the antibody response to the vaccine components. The results showed that the vaccinated animals had a lower proportion of new S. aureus infection and a longer time to new infection compared to the control group. Additionally, the vaccine induced a significant increase in specific antibodies and reduced the hemolytic activity of the native toxin.

Further investigation is also warranted to understand the unexpectedly high level of colistin resistance observed inE. coliisolates.

Antimicrobial use, residue and resistance dissemination in freshwater fish farms of north-central Nigeria: One health implications

Findings revealed widespread self-prescription of antimicrobials and lack of adherence to withdrawal periods, with socio-cultural drivers contributing to misuse and emergence of resistance. Majority of farms were classified as high risk, with residues detected in samples from nearly half of the farms. Promotion of antimicrobial stewardship and control programs are necessary to address these issues for food safety and public health.

Research on Maasai pastoralists in Tanzania shows that most respondents do not frequently consult these providers, instead relying on advice from family and friends. Factors such as age, education, observance of treatment failure, and herd disease burdens are associated with seeking out health services. Patterns of animal health seeking among the Maasai are influenced by their high confidence in their own abilities in livestock disease and treatment, highlighting the need for more research to understand perceptions and practices regarding animal health service providers.
