Summary: The physicochemical property, volatile flavor compounds, and microbial community structure of Jinhua fatty ham (FH) and lean ham (LH) were investigated and compared. FH had higher pH and slightly lighter and yellower color than LH. FH had generally richer aldehydes, ketones, esters, heterocyclic, and sulfur-containing compounds, while LH showed higher abundance of total alcohols and acids.

Integrating identification and targeted proteomics to discover the potential indicators of postmortem lamb meat quality

Summary: The aim of this study was to identify potential indicators of lamb meat quality using TMT and PRM-based proteomics combined with bioinformatic analysis. Lamb muscles were divided into three different meat quality groups based on tenderness, colour, and water-holding capacity. The abundance of PGK1, ENO3, MYBPC1, and MYLPF was significantly different in the three groups and could serve as potential indicators for meat quality. Furthermore, the metabolic processes of glycolysis, oxidative phosphorylation, and muscle contraction showed distinct changes in different groups and were found to be the key biological pathways influencing meat quality.

A proteomic approach for in-depth characterization and understanding the impact of immunocastration on dry-cured ham of male and female pigs

Summary: This study analyzed the protein differences between dry cured ham from immunecastrated pigs and entire females, as well as between immunecastrated pigs and surgically castrated males. The results showed differential abundance of proteins in the samples, with an increase of structural proteins in females and higher abundance of trypsinogen and proteosome subunit C9-like protein in immunocastrated males. MYH4 and ACT were found to be potential biomarkers in both immunecastrated males and females.

Insights into ultrasonic treatment on the mechanism of proteolysis and taste improvement of defective dry-cured ham

Summary: The effects of ultrasonic treatment on proteolysis and taste development of defective dry-cured ham were investigated in this study. The results showed that the treatment of 1000 W & 50 C significantly improved the overall taste, umami, sweetness, and richness, while reducing bitterness values. The activities of DPP I and cathepsin B + L were partially maintained, and there was intense degradation of structural proteins. The content of total free amino acids increased, especially sweet and umami amino acids, contributing to the improvement in taste quality.
