Ingestion of Free Amino Acids Compared with an Equivalent Amount of Intact Protein Results in More Rapid Amino Acid Absorption and Greater Postprandial Plasma Amino Acid Availability Without Affecting Muscle Protein Synthesis Rates in Young Adults in a Double-Blind Randomized Trial

Michelle E. G. Weijzen et al.

Summary: This study compared protein digestion, amino acid absorption, and muscle protein synthesis response after ingesting intact milk protein or an equivalent amount of free amino acids. The results showed that ingestion of free amino acids led to a faster absorption of amino acids and greater availability in the bloodstream. In conditions where protein digestion and amino acid absorption are compromised, ingestion of free amino acids may be preferred.

Yeast Protein as an Easily Accessible Food Source

Monika Elzbieta Jach et al.

Summary: In recent years, consumer demand for healthy food has increased, prompting scientists to search for innovative methods of food production. Yeast protein biomass is a promising source of easily digestible protein with nutritional benefits. The production of yeast protein can also contribute to waste purification.

Effects of amino acid composition of yeast extract on the microbiota and aroma quality of fermented soy sauce

Xinyun Zhou et al.

Summary: This study explores the potential of commercial yeast extracts in enhancing the flavor quality of soy sauce by shaping the core fermentation microbiota. Alkaline and neutral amino acids promote the competitive advantage of flavor-producing bacteria, while acidic amino acids increase the stress resistance of the fermentation microbiota, particularly the abundance of Lactobacillus. Formulating the optimal ratio of different amino acids activates specific metabolic pathways and leads to an increase in malt-like aroma.

Effect of Saccharomyces and non-Saccharomyces native yeasts on beer aroma compounds

M. N. Larroque et al.

Summary: The increase in microbreweries has led to exponential growth in craft beer production. Interest in non-traditional yeasts for unique fermentation aromas is rising. Through analysis of fermentation profiles and sensory evaluations, local Saccharomyces and non-Saccharomyces yeasts from diverse food sources show potential for enhancing fermented and aromatic characteristics.

Umami taste in edible seaweeds: The current comprehension and perception

Jelena Milinovic et al.

Summary: Umami, the fifth basic taste, was discovered in Japan more than a century ago but gained recognition slowly in the Western world. As consumers' desire for delicious food grows, umami taste becomes an important criterion of choice. The popularity of edible seaweeds worldwide is attributed not only to their unique flavors and nutritional benefits, but also to their umami taste.

Yeast Extracts: Nutritional and Flavoring Food Ingredients

Daniel Tome

Summary: Yeast extracts are concentrates of soluble yeast fractions, particularly Saccharomyces cerevisiae. They are described for their nutritional composition and flavoring properties, providing diverse flavors such as meaty, kokumi, umami, and salty taste. They are a source of amino acids and can induce umami taste, similar to monosodium glutamate, at lower concentrations in foods.
