Differences in protein composition and functional properties of egg whites from four chicken varieties

Comparative Yolk Proteomic Analysis of Fertilized Low and High Cholesterol Eggs during Embryonic Development

Summary: Cholesterol concentration in egg yolk significantly affects protein abundance, molecular function, and biological processes related to lipid transport and embryo protection during embryonic development. High cholesterol eggs exhibit increased expression of certain proteins like vitellogenin, ovoinhibitor, immunoglobulin lambda light chain precursor, and beta-2-glycoprotein-1 precursor, while low cholesterol eggs show significant intensities of proteins like haptoglobin protein PIT-54 and vitelline membrane outer layer proteins. Additionally, the ovotransferrin and vitellin membrane outer layer proteins play important roles in regulating biological processes and cellular components in the egg yolk.

Unconventional effects of long-term storage of microwave-modified chicken egg white lysozyme preparations

Summary: The research shows that the basic parameters determining the quality and utility of the microwave-modified enzyme significantly improved during long-term storage, especially in preparations modified for the longest time and in the most acidic environment, where the number of oligomers increased by 18% and the surface hydrophobicity increased by 31% after 12 months. Additionally, microbiological tests demonstrated the enhanced effect on gram-positive and gram-negative bacteria from microwave-modified lysozyme preparations after 12 months.
