Aflatoxin B1 Detoxification Potentials of Garlic, Ginger, Cardamom, Black Cumin, and Sauteing in Ground Spice Mix Red Pepper Products

Summary: The potential of natural plant origin bioactive compounds, including garlic, ginger, cardamom, and black cumin, in detoxifying AFB1 was explored in this study. The major spices showed AFB1 levels below the detection limit. Cooking the spice mix red pepper in hot water at 85°C for 7 minutes resulted in the maximum AFB1 detoxification. The study findings could contribute to mitigation plans for AFB1 in spice-processing enterprises.
