Pea protein-xanthan gum interaction driving the development of 3D printed dysphagia diet

Summary: With the increasing prevalence of chewing/swallowing difficulties in the elderly population, there is a growing demand for dysphagia diets. This study explored the use of 3D printing technology to create visually appealing dysphagia diets based on pea protein isolate (PPI) and xanthan gum (XG). The addition of XG at different rates was found to affect the microstructure, mechanical properties, and compatibility between PPI and XG. The results showed that a 0.3% XG addition demonstrated high printing precision and sensory evaluation, making it suitable for a pureed/extremely thick dysphagia diet. This research provides valuable insights for the development of attractive dysphagia diets using 3D printing.

Progress in smart labels for rapid quality detection of fruit and vegetables: A review

Summary: Smart labels are an effective way to provide timely feedback to consumers on the quality of fruit and vegetables, and they have great potential for development and market application. This paper reviews the types and research progress of smart labels and summarizes their classification based on the factors affecting fruit and vegetable quality. Smart labels suitable for fruit and vegetable quality inspection, including ethylene-sensitive, color-sensitive, and temperature-sensitive types, are collated based on the characteristics of fruit and vegetables. Finally, the future development and new applications of smart labels are foreseen.

A novel anthocyanin electrospun film by caffeic acid co-pigmentation for real-time fish freshness monitoring

Summary: In this study, a novel colorimetric sensing film was developed using polyacrylonitrile, blueberry anthocyanins, and caffeic acid for real-time monitoring the freshness of fish. The film showed a color change from pink to light purple, and then to dark purple, indicating spoilage. The change correlated well with the TVB-N content and pH values in fish. Caffeic acid significantly enhanced ammonia responsiveness and improved the storage stability of the film.

This review provides an overview of functional design, different classes, and applications of TRPs in 3D printing, as well as basic knowledge of gelation mechanisms, bio-based adsorption, adhesion, and fabrication strategies.

Enhancing the stability of lutein by loading into dual-layered starch-ethyl cellulose gels using 3D food printing

Summary: The goal of this study was to enhance the stability of lutein by encapsulating it into starch-ethyl cellulose gels using 3D printing. The effects of various factors, including layer height, EC and starch concentrations, and printing temperature, were investigated. The optimized conditions resulted in significantly higher lutein retention and improved stability.

Multi-functional konjac glucomannan/chitosan bilayer films reinforced with oregano essential oil loaded beta-cyclodextrin and anthocyanins for cheese preservation

Summary: A multifunctional bilayer film was prepared using a solvent casting method. The film consisted of an inner indicator layer (KEA) incorporating elderberry anthocyanins (EA) into konjac glucomannan (KGM), and an outer hydrophobic and antibacterial layer (CS-beta-CD@OEO) incorporating beta-cyclodextrin (beta-CD) loaded with oregano essential oil (OEO) inclusion complexes (beta-CD@OEO) into chitosan (CS). The bilayer film showed improved mechanical properties, thermal stability, water resistance, pH responsiveness, antioxidant, and antibacterial activities, making it suitable for food packaging applications.

Investigation of 3D printing of children starch gummies with precise and special shape based on change of model parameters

Summary: This study investigated the feasibility of using corn starch and erythritol as initial printing inks for manufacturing children's printed products with high accuracy and special shape, with the addition of gelan gum. By improving the printability and printing accuracy of special shapes using material properties and model parameters, it was found that materials with hydrophilic colloid additions exhibited higher hardness, viscosity, rigidity, and self-supporting ability. The addition of gelan gum also improved the printing performance, with the best results observed at 1.5% concentration. Further experiments showed that model parameters significantly influenced the printing precision and success rate of models with special shapes.

Surimi freshness monitoring of 4D printing material with anthocyanin

Summary: This study proposed a new idea for the application of 3D printing in the preservation and processing of aquatic products. By adding xylo-oligosaccharide and CaCl2, the gel strength and hardness of surimi were improved. A gel made of carrageenan, xanthan gum, and hydroxymethyl cellulose was designed to wrap the surimi and change color with the pH change of surimi, allowing detection of deterioration during refrigeration.

Facile fabrication of sandwich-like anthocyanin/chitosan/lemongrass essential oil films via 3D printing for intelligent evaluation of pork freshness

Summary: Chitosan, mulberry anthocyanin, and lemongrass essential oils were used to create indicator films using 3D printing technology, with cassava starch as a protective layer. These films exhibited antioxidant and antibacterial properties, with the sensitivity increasing as pH levels rose. When chilled pork spoiled, the color change in the indicator films could be analyzed automatically by a smartphone app to determine meat freshness.

Inhibition of nitrite in prepared dish of Brassica chinensis L. during storage via non-extractable phenols in hawthorn pomace: A comparison of different extraction methods

Summary: This study investigated the effect of non-extractable phenols (NEP) from hawthorn pomace on the nitrite content in prepared vegetable dishes (PVDs). The results showed that NEP could reduce the nitrite content by inhibiting microorganism growth and directly scavenging nitrite. Hawthorn pomace is a potentially promising option for reducing nitrite in PVDs.

Effect of acetylation modification on the emulsifying and antioxidant properties of polysaccharide from Millettia speciosa Champ

Summary: By covalently grafting acetyl groups to the Millettia speciosa Champ polysaccharide chains, the emulsifying performance was improved. Acetylation modification led to decreased antioxidant ability and degradation of the polysaccharide, but resulted in a significant reduction in droplet size of the emulsion. Additionally, the emulsifying properties were influenced by the multi-scale molecular structures of the acetylated polysaccharides.

A pH-intelligent response fish packaging film: Konjac glucomannan/carboxymethyl cellulose/blackcurrant anthocyanin antibacterial composite film

Novel aldehyde sensitive bio-based colorimetric film for kiwi fruit freshness monitoring

Impact of viscoelastic and structural properties from starch-mango and starch-arabinoxylans hydrocolloids in 3D food printing

Summary: In this study, printability of starch-mango and starch-arabinoxylan blends for 3D food printing was evaluated through visco-elastic analysis and microstructural characterization. High starch content in the blends was found to make them more suitable for 3D food printing, exhibiting solid-like behavior and high thixotropy. Microstructure examination revealed a mesh-like arrangement and cell size <10 μm, supporting the printed structure. Highly desirable materials for extrusion in 3D food printing are those with a gel-like structure, high thixotropy, and undistorted microstructure.
