Extraction, bioactive function and application of wheat germ protein/ peptides: A review

Impact of non-covalent bound polyphenols on conformational, functional properties and in vitro digestibility of pea protein

Summary: This study investigated the effects of the non-covalent interaction between pea protein and epigallocatechin-3-gallate, chlorogenic acid, and resveratrol on the structure and function of the protein. The results showed that polyphenols mainly quenched the fluorescence of the protein through static quenching, and the main interaction forces were hydrogen bonding and van der Waals forces for PPI-EGCG. Moreover, the presence of polyphenols also improved the emulsification, foaming, and in vitro digestibility of the protein.

Effect of interfacial composition on the physical stability and co-oxidation of proteins and lipids in a soy protein isolate-(-)-epigallocatechin gallate conjugate emulsion

Summary: In this study, oil-in-water emulsions were stabilized by a combination of soy protein isolate-(-)-epigallocatechin gallate (SPIEGCG) conjugate, tea saponin (TS), and hexadecyltrimethylammonium bromide (CTAB). Results showed that TS had better emulsifying ability than CTAB, reduced interfacial tension, and resulted in smaller particle size at a concentration of 1.0% (w/v). The presence of TS displaced protein molecules at the interface and inhibited protein oxidation, while the presence of CTAB enhanced protein and lipid oxidation. Furthermore, the addition of TS delayed lipid oxidation, especially at a concentration of 1.0% (w/v). Overall, combining SPI-EGCG conjugates with TS provides an optimal design for developing nutritionally fortified products with longer shelf lives.

Tuning the molecular interactions between gliadin and tannic acid to prepare Pickering stabilizers with improved emulsifying properties

These results suggest that SPI-EGCG conjugates can be used as food additives and for constructing lipophilic active ingredient delivery systems.
