Metabolomics and lipidomics profiles related to intramuscular fat content and flavor precursors between Laiwu and Yorkshire pigs

Xinhua Hou et al.

Summary: Chinese indigenous pig breeds have higher intramuscular fat content and better meat quality. This study investigated the differential metabolites and lipids in the skeletal muscle of Laiwu and Yorkshire pigs, revealing their association with intramuscular fat content and meat flavor. The results showed that the Laiwu pig had a faster lipid droplet formation and contained more triglyceride, reflecting its higher intramuscular fat content.

DNA Demethylation of Myogenic Genes May Contribute to Embryonic Leg Muscle Development Differences between Wuzong and Shitou Geese

Xumeng Zhang et al.

Summary: Whole genome bisulfite sequencing was used to compare the leg muscle tissue of Wuzong and Shitou geese, revealing that the embryonic leg muscle development of Shitou geese was more intense than that of Wuzong geese at E23. Gene expression showed a negative correlation with DNA methylation around transcription start sites (TSSs), and a positive correlation in the gene body near TTSs. Earlier demethylation of myogenic genes around TSSs in Wuzong geese contributed to their earlier expression. DNA methylation patterns of the MyoD1 promoter region also showed earlier demethylation in Wuzong geese, leading to its earlier expression. These findings suggest that DNA demethylation of myogenic genes may contribute to embryonic leg muscle development differences between Wuzong and Shitou geese.

Comparative Transcriptome Analyses of Leg Muscle during Early Growth between Geese (Anser cygnoides) Breeds Differing in Body Size Characteristics

Jun Tang et al.

Summary: Goose is an important poultry in the poultry industry. The growth performance of geese significantly affects their market weight and slaughter weight. In this study, we compared the growth characteristics and gene expression between Shitou and Wuzong goose breeds. We found that the logistic model best described the relationship between body weight and body size for both breeds. Genes involved in muscle growth and cell signaling pathways were identified as potential factors influencing growth. This study provides valuable insights for breeding management and understanding the genetic mechanisms underlying body size differences between goose breeds.

Jiangnan Huang et al.

Summary: This study investigated the effects of crossbreeding and sex on growth performance, slaughter performance, and meat quality in Xingguo gray (XG) goose using transcriptomic and metabolomic techniques. The results showed that crossbreeding significantly improved production performance and affected gene expression and metabolites in breast muscle of both female and male geese. These findings are important for improving XG goose production performance.

Heating temperatures affect meat quality and vibrational spectroscopic properties of slow- and fast-growing chickens

Sasikan Katemala et al.

Summary: This study investigated the impact of different cooking methods and temperatures on the quality of chicken meat from fast and slow-growing breeds. The results showed that taste-enhancing compounds were better retained in slow-growing chicken meat, and high heat treatment reduced collagen content in all breeds. The shear force values of slow-growing breeds were not affected by high heat. Spectroscopic techniques were effective in differentiating meat quality based on breed and cooking temperature.

Present Conservation Status and Carcass and Meat Characteristics of Lithuanian Vistines Goose Breed

Violeta Razmaite et al.

Summary: This study aimed to evaluate the conservation status of the Lithuanian local Vistines goose breed and assess the carcass and meat quality characteristics in the breast and thigh based on sex. Monitoring the geese included in the breeding system helped assess the changes in population size and conservation status. The results showed that sex influenced the carcass composition but had no effect on meat quality. Muscle type affected meat and lipid quality parameters, with the thigh muscles showing more favorable characteristics for consumer health compared to the breast.

Effect of anhydrous betaine and hydrochloride betaine on growth performance, meat quality, postmortem glycolysis, and antioxidant capacity of broilers

R. Chen et al.

Summary: Anhydrous betaine showed better effects than hydrochloride betaine in improving growth performance and breast muscle yield of broilers. Moreover, anhydrous betaine (1,000 mg/kg) or equimolar hydrochloride betaine supplementation could improve meat quality by decreasing drip loss, free water proportion, and lactate content, and enhancing muscle antioxidant capacity.

Effects of marketable ages on meat quality through fiber characteristics in the goose

Kaiqi Weng et al.

Summary: The study investigated the fiber characteristics and meat quality of Yangzhou geese at different marketable ages. Older marketable age did not affect muscle fiber type in geese, but contributed to larger muscle fiber area, higher intramuscular fat and protein content, as well as redder and chewier meat. A marketable age of 90 or 120 days was recommended for improved meat quality in goose meat production.

Quantitative phosphoproteomic analysis unveil the effect of marketable ages on meat quality in geese

Kaiqi Weng et al.

Summary: The study found that geese at 120 days had darker and redder meat, chewier texture, higher water-holding capacity, and greater protein and intramuscular fat content in their breast muscles compared to geese at 70 days. This was attributed to up-regulated phosphorylated myofibrillar proteins and glycolytic enzymes, as well as phosphorylated mitochondrial proteins interacting with glycolytic enzymes in energy metabolism. Additionally, phosphorylation of certain proteins positively affected intramuscular fat deposition, providing a potential strategy for improving meat quality in younger marketable age geese.

Glyoxylate reductase/hydroxypyruvate reductase regulates the free d-aspartate level in mammalian cells

Masumi Katane et al.

Summary: Multiple d-amino acids play distinctive physiological functions in mammalian cells, with d-aspartate being critical in neuroendocrine and endocrine systems as well as the central nervous system. The study established a cell line overexpressing cytoplasm-localized DDO, which cannot survive in the presence of high d-aspartate concentrations due to toxic hydrogen peroxide accumulation. Additionally, a clone of GRHPR was found to affect d-aspartate metabolism and improve cell survival.

TMEM182 interacts with integrin beta 1 and regulates myoblast differentiation and muscle regeneration

Wen Luo et al.

Summary: TMEM182 is specifically expressed in skeletal muscle and adipose tissue, regulated transcriptionally by MyoD1. Functionally, TMEM182 inhibits myoblast differentiation and fusion. In vivo studies show that TMEM182 induces muscle fibre atrophy and delays muscle regeneration, while TMEM182 knockout results in increased body weight, muscle mass, and accelerated skeletal muscle regeneration. Moreover, TMEM182 interacts with ITGB1 to modulate ITGB1 activation and downstream signaling pathways during myogenesis.
