Plant protein-based emulsions for the delivery of bioactive compounds

Summary: Emulsion-based delivery systems (EBDSs) can effectively carry bioactive compounds (bioactives). Plant proteins (PLPs) have been found to be potential stabilizers of emulsions for loading, protection and delivery of bioactives. Various strategies can be used to alter the characteristics of PLPs and improve their emulsification and encapsulation performance. The stability, release, and bioavailability of encapsulated bioactives can be customized by optimizing the processing conditions and emulsion formulation. This paper provides cutting-edge information on PLP-based emulsions carrying bioactives, including preparation methods, physicochemical characteristics, stability, encapsulation efficiency and release behavior. Strategies for enhancing the emulsifying and encapsulation properties of PLPs in EBDSs are also reviewed, with a focus on the use of PLP-carbohydrate complexes for stabilizing bioactive-loaded emulsions.

High-speed electrospinning of phycocyanin and probiotics complex nanofibrous with higher probiotic activity and antioxidation

Summary: This study demonstrates the co-encapsulation of probiotics and phycocyanin using electrospinning. The resulting fibers exhibited a homogeneous surface and circular shape. The presence of Lactiplantibacillus plantarum 1-24-LJ promoted the encapsulation of phycocyanin and improved the thermal stability of the fibers. The co-embedded fibers showed synergistic antioxidant effects and enhanced the viability of the strain.

Summary: The aim of this study was to investigate the in vitro gastrointestinal digestion and storage properties of Lactobacillus plantarum 550 encapsulated in soy protein isolate (SPI) and peach gum polysaccharide (PG) through spray drying. The combination of SPI and PG showed positive effects on both gastric resistance and storage stability of cells. The study demonstrates that SPI combined with PG may provide effective protection to cells not only during spray drying, but also during storage and gastrointestinal digestion.

Self-assembly of plant polyphenols-grafted soy proteins to manufacture a highly stable antioxidative Pickering emulsion gel for direct-ink-write 3D printing

Summary: By grafting three different polyphenols (rosemary, thyme, and basil) onto soy protein isolate, a precursor printable ink was developed for 3D printed plant-based cheese. The polyphenols-grafted soy protein inks showed more stable emulsions and improved interfacial adsorption properties compared to soy-based ink. The ink formulated with soy protein-g-rosemary polyphenols exhibited smaller droplet size, stiffer structure, and stronger surface activity, resulting in a 3D printed cheese analogue with improved sensory characteristics.

Non-covalent interaction of soy protein isolate and catechin: Mechanism and effects on protein conformation

Summary: Understanding the interaction mechanism between proteins and polyphenols is crucial for the application of protein-polyphenol compounds in food. This study showed that non-covalent modification of soy protein isolate (SPI) with catechin resulted in aggregation and network-like structure formation. The increased catechin concentration caused SPI to become looser and more disordered, with an opened internal structure and exposed hydrophobic groups. The main forces between SPI and catechin were found to be hydrophobic interactions and hydrogen bonds.
